Epic Nut Roast

Adapted to vegan/gluten free from a Jamie Oliver recipe. It was a little spicy, I liked it by my husband didn't due to the fruit.

Epic Nut Roast

Ingredients

100 g quinoa
150 g onion squash
1 onion
2 cloves of garlic
2 sticks of celery
olive oil
200 g tinned or vac-packed chestnuts (can be substituted with hazelnuts or pecans)
2 sprigs of fresh rosemary
 teaspoon cayenne pepper
1 pinch of sweet smoked paprika
1 teaspoon dried oregano
sea salt
freshly ground black pepper
2 large field mushrooms
40 g vegan butter, plus extra for greasing
1 lemon
60 g fresh GF breadcrumbs
80 g dried cranberries
100 g dried apricots
100 g mixed nuts, such as walnuts, cashews, hazelnuts and brazil nuts
4x vegan egg replacer

For the salsa rossa picante:
2 fresh red chillies
1 stick cinnamon
2 cloves of garlic
1 small onion
 bunch of fresh thyme
2 x 400 g tins of plum tomatoes
1 tablespoon balsamic vinegar
40 g vegan Cheddar cheese

Method

Preheat the oven to 180C/350F/gas 4. Grease a 1-litre loaf tin with a little butter, then line with greaseproof paper.

Cook the quinoa according to the packet instructions, then set aside to cool.
Meanwhile, halve the squash, scoop out the seeds, then chop the flesh into rough 1cm chunks (you dont need to peel the skin).
Peel and roughly chop the onion.
Peel and finely slice the garlic, then trim and roughly chop the celery.
Heat 2 tablespoons of olive oil in a large frying pan over a medium heat, then add the chopped vegetables and crumble in the chestnuts.
Pick in the rosemary leaves, discarding the stalks, then toss well.
Add the cayenne, paprika and oregano.
Season, stir well, then reduce the heat to medium-low.
Cook for around 15 minutes, or until softened slightly.
Meanwhile, roughly chop the mushrooms, then add to the pan for the final 5 minutes of cooking.
Remove the pan from the heat, stir in the butter and grate in the zest from half the lemon.
Transfer the mixture to a large bowl, then stir in the cooled quinoa, breadcrumbs, dried fruit and nuts (feel free to bash up some of the larger nuts if you prefer a less chunky consistency).
Crack in the eggs, then stir well to combine.
Pop the mixture into the prepared loaf tin, then place in the hot oven for 45 to 50 minutes, or until cooked through and set.
When theres about 30 minutes to go, make the salsa rossa.
Place a roasting tray on the stove over a medium-low heat. (I didn't have a roasting tray suitable for the stove top so I use a pan and then transferred it to a roasting pan for the oven.)
Prick the chillies and add to the tray with a lug of olive oil and the cinnamon stick.
Peel and finely slice the garlic, peel and slice the onion into 8 wedges, then add them to the tray.
Pick in most of the thyme leaves (save a few sprigs to one side), pour in the plum tomatoes and 1 tins worth of water, then stir well, breaking up the tomatoes with the back of a spoon.
Season with salt and stir in the balsamic vinegar, then bring to the boil.
Reduce the heat and simmer for around 20 minutes, or until thickened and reduced.

Once the salsa is ready, take 1 chilli out of the tray, then carefully halve, deseed and roughly chop it before returning it to the tray.
Loosen the salsa with a splash of water, if needed, then pick out the extra chilli and cinnamon stick and put to one side.
Remove the nut roast from the oven, then carefully turn it out, peeling away the greaseproof paper.

Pop the nut roast into the tray and grate over the cheese.

Place the cinnamon stick, chilli and reserved thyme sprigs on top, then return it to the oven for 10 to 15 minutes, or until bubbling and golden.
Serve with mashed potato and seasonal greens.

Chickpea Cutlets

This recipe is originally from the Post Punk Kitchen. I had to change it slightly to make it gluten free.
They were pretty good, a bit bready and don't really taste like meat but they are a great substitute with sides and sauce!

Chickpea Cutlets

Ingredients

1 16 oz can chickpeas, drained and rinsed
1/4 cup extra virgin olive oil
1 cup gluten free gluten
1 cup plain GF breadcrumbs
1/2 cup vegetable broth or water
1/4 cup GF soy sauce/Tamari
1 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon dried sage
Olive oil for pan frying

Optional ingredients:
4 cloves garlic, pressed or grated
1 teaspoon grated lemon zest

Method

In a mixing bowl, mash the chickpeas together with the oil until no whole chickpeas are left using an avocado masher or a strong fork.
Alternately, you can pulse the chickpeas in a food processor, just get them mashed up.
If using a food processor, transfer to a mixing bowl when done.
Add the remaining ingredients and knead together for about 3 minutes, until strings of gluten have formed.
Preheat a large heavy-bottomed skillet over low-medium heat.
Divide the cutlet dough into 8 equal pieces.
To form cutlets, knead each piece in your hand for a few moments and then flatten each one.
Add a moderately thin layer of olive oil to the bottom of the pan.
Place the cutlets in the pan and cook on each side for 6 to 7 minutes.

Add more oil, if needed, when you flip the cutlets.

Theyre ready when lightly browned and firm to the touch.
Ive found that they cook more thoroughly if I cover the pan in between flips.
I also use my spatula to press down on them while theyre cooking, that way they cook more evenly.

Fat Free Vegan Meatloaf

This recipe comes from Fat Free Vegan's Thanksgiving Meatless Loaf. It was pretty tasty but didn't really taste like meatloaf.

Fat Free Vegan Meatloaf

Ingredients

1 medium sweet potato
1 medium onion
2 ribs celery
1 medium carrot
2 cloves garlic, minced
1 15-ounce can cannellini beans (or other white beans), drained and rinsed
14 ounces extra-firm tofu (one 14 to 16-ounce package)
2 tablespoons gluten-free soy sauce
2 tablespoons tomato paste
1 tablespoon spicy brown or whole-grain prepared mustard
1/4 cup fresh parsley, chopped
1/2 tablespoon rubbed sage
1 tablespoon thyme leaf
1/2 tablespoon dried rosemary, crushed
1 1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 teaspoon smoked paprika
2 tablespoons nutritional yeast
1/2 cup chopped walnuts (optional)
3/4 cup quick GF oatmeal

Method

Wash the sweet potato, pierce it several times with a fork, wrap it in a paper towel, and microwave until done, 4-5 minutes. (Alternately, bake or steam the sweet potato.)
Allow to cool enough to handle and then peel and set aside.
Mince the onion, celery, and carrot by cutting each vegetable in quarters and then pulsing in a food processor until finely chopped.
Heat a large, non-stick skillet.
Add the minced vegetables, including garlic, and cook, stirring regularly, until they become tender, about 6-10 minutes.
Add water by the teaspoon if necessary to keep the vegetables from sticking or becoming dry.
Once theyre softened, add the drained beans and mash them lightly with a slotted spoon or spatula.
Place the peeled sweet potato into the food processor along with the tofu, soy sauce, and all seasonings, including nutritional yeast.
Process until fairly smooth. Add the walnuts and pulse a few more times.
Scrape the tofu mixture into a large mixing bowl and add the quinoa flakes and the cooked vegetables. Stir well.
Preheat oven to 375F. If you have a silicone baking mat (recommended) place it on a baking sheet. Otherwise line the baking sheet with parchment paper or spray with non-stick spray.
Spoon the tofu mixture onto the prepared baking surface, using dampened hands to shape it into an oblong or oval loaf about 2 1/2 inches high.

Bake for 25 minutes or until the top is evenly browned.
Loosely cover with aluminum foil and cook for 20 more minutes.
Check to make sure that the center is firm; if not, give it a little extra time. (You can also remove the foil and cook for 5 more minutes for a crunchier crust.)
Remove from oven and allow to stand for 10 minutes before slicing and serving.

BBQ Pulled Mushroom Sandwich

This recipe comes care of Chef Chris Rubenstein.
I used collard greens, Chinese cabbage and carrots for my salad as I didn't have the other ingredients.

BBQ Pulled Mushroom  Sandwich with Kale Slaw
Serves 4

Ingredients

For BBQ pulled mushroom;
1 lb king oyster mushrooms/trumpet mushrooms (Asian supermarket)
1 cup BBQ sauce (link to the homemade one I used)
2 cups wood chips (apple or cherry), soaked in water for 1/2 hour
2 Tbls oil (not olive)

For kaleslaw;
1 head kale
1 cup vegan mayo
1 red onion
1/2 cup apple cider vinegar
4 Tbls sugar
1 Tbls crushed red pepper
2 carrots

For serving;
4 buns/rolls

Method

Smoke mushrooms - in a regular gas grill, use a smoking box and spread out the wood chips evenly.
Set grill on high (wanting to get to around 600F) adding the smoking box and wait around 10-15 mins for the wood chips to start smoking.
Break apart the mushrooms into stalks and set them on the top rack of your grill

Close the lid and leave to smoke for around 20 mins, keep an eye on them - they will get dark and smokey but don't burn them.

Once the mushrooms are smoking start on the kale-slaw.
Pull the leaves off your kale and roll up to slice thinly.
Peel the carrots and grate.
Julienne the onions.
Add all the vegetables to a salad bowl and toss together.
In a mixing bowl add mayo, apple cider vinegar, crushed peppers, sugar and whisk until well mixed.
Add dressing to vegetables and toss through.

Shredding the mushrooms - using a fork just scrap down the mushroom stem to get shreds and with the top pieces you can just push down with a fork.

In a frying pan add oil on a low-medium heat and add mushrooms and allow to coat with oil.
Then add BBQ sauce and mix to coat the mushrooms.
Allow sauce to caramelize slightly.

Make your sandwich by adding the slaw and then the mushrooms.

Spicy Smoky Tofu Jerky

Gorgeous hubby got me a huge dehydrator for Mother's Day. My first test is tofu jerky! I had previously tried this in the oven but had mixed results with the texture. Click here for that recipe and an assortment of marinades!

Spicy Smoky Tofu Jerky

Ingredients

1 lb extra firm tofu, pressed
1/4 cup tamari or soy sauce
1 Tbls liquid smoke
1/8 cup water
1 Tbls Sriracha sauce or any chili paste
1 Tbls onion powder
1 Tsp garlic powder or 1 clove garlic
1 Tbls black pepper
1 tsp brown sugar

Method

Mix marinade together.
Slice tofu into 1/4 inch slices and place in a container with the marinade.
Leave for two hours to marinate, turn occasionally to ensure all pieces are marinade.
Place in dehydrator and leave for 8 hours or overnight.
You can do this in the oven on a cookie tray on the lowest setting but it may not turn out as chewy.

Asian "Crab" Salad

This was inspired by a Nigella Lawson recipe. Heart of Palm is a great crab substitute in any crab recipe but it does come from palm trees you must make sure it was sourced sustainability. Hawaii is a great source of sustainable sourced palm.

Asian "Crab" Salad

Ingredients

2 tablespoons mirin
 teaspoon wasabi paste
1 tablespoon rice wine vinegar
1 drop sesame oil
teaspoon Maldon salt (or 1/4 teaspoon table salt)
1 long fresh red chilli pepper (deseeded and finely chopped) - optional
1 Tbls red currant or cranberry jelly
200 grams heart of palm (get sustainable), drained
1 teaspoon lime juice
150 grams rocket (or whatever lettuce you prefer)
1/2 ripe avocado, sliced

Method

Shred the heart of palm with your fingers or pulse in a food processor.
Whisk together the mirin, wasabi paste, red currant jelly, rice vinegar, sesame oil and salt in a small bowl.
In a medium bowl mix the heart of palm and 1 Tbls of the dressing, and fork through to mix thoroughly.
In a medium bowl, add the lime juice and then the salad leaves and toss well to mix, before arranging on plates.
Add crab on top and drizzle remaining dressing over the top.
Top with sliced avocado.

Buffalo Tofu Bites

These amazing tofu bites have the taste of Buffalo Hot Wings without the carnage...yay! My hubby came up with this recipe and they were so delicious!!! Great alone or accompanied by Vegan Ranch Dressing.

Buffalo Tofu Bites

Ingredients

1 packet of extra firm tofu, drained and pressed
1/2 cup corn flour
Oil for deep frying

for the sauce;
1 cup Frank's Hot Sauce (I used the medium one)
3 Tbls vegan butter
1/4 cup agave syrup
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp course black pepper (optional)
2 Tbls bourbon (optional)
Ground cayene pepper to taste (optional - if you like them HOT)

Method

Preheat oven to 200F and prepare an oven tray lined with foil.
Cut the tofu longways into 1/4 inch strips then cut down the middle to create bite size pieces.
Heat deep frying oil to 375F.
Dredge the tofu bites in corn flour and set aside to fry.

As the oil is heating up make the sauce.
In a small pot whisk all sauce ingredients on a medium heat until well mixed.
Turn heat down to low and allow to simmer.

Once oil is hot enough fry 4 pieces of tofu at a time until slightly golden then transfer to a plate lined with paper towels.

Once the four new pieces of tofu are cooking place the paper towel ones in the sauce and turn to coat.

Leave until the next batch is ready to come in.
Once ready to take out place on the oven tray.
When all pieces are on the tray bake in the oven for 10 mins or until ready to eat.
This will keep them warm and allow the sauce to dry a bit.
Serve alone or with vegan ranch dressing.

Left overs (if there are any!) make a great salad;

Quick Ragu

It's no secret I LOVE Nigella Lawson and if she ever goes vegan I'll be dancing a self choreographed happy dance in the street but until then I have to find a way to veganize her wonderful recipes.
I've just been watching her "Express" series again, cause I love watching her work and every recipe is under 30 minutes...hurrah! Ragu is an Italian meat based pasta sauce. This one based on "Rapid Ragu" is a bit like having vegan ground beef in a fancy sauce with melted cheese on top - basically comfort food you will NOT want to share. (Sidebar-Am I the only one who hates sharing food?)

Quick Ragu

Ingredients

2 tablespoons garlic infused olive oil
125 grams faux bacon bits
500 grams faux ground beef
75 grams caramelized onions (you can buy these in a jar or make them yourself)
80 ml Marsala wine or Sherry
1 x 400 grams can chopped tomatoes
75 grams green lentils
125 ml water
50 grams grated vegan Cheddar cheese

Method

Heat the oil in a wide, medium-sized saucepan, and fry the faux bacon until beginning to crisp.
Add the faux beef, breaking it up with a fork in the bacony pan as it browns.
Tip in the caramelized onions, Marsala, tomatoes, lentils and water and bring the pan to the boil.
Cover with the lid, if using, and simmer the ragu for 20 minutes stirring occasionally.
Sprinkle with the cheese (if using) before serving.

Faux Meat Loaf

This is based on The Fat Free Vegan's "Thanksgiving Meatless Loaf" recipe. Definitely loved this one even though the pics don't really do it much justice! Delicious with ketchup, Golden Gravy or Mushroom Gravy!

Faux Meat Loaf

Ingredients

1 medium sweet potato
1 medium onion
2 ribs celery
1 medium carrot
2 cloves garlic, minced
1 15-ounce can cannellini beans or white beans, drained and rinsed
14 ounces extra-firm tofu
2 tablespoons gluten-free soy sauce
2 tablespoons tomato paste
1 tablespoon whole-grain prepared mustard
1/4 cup fresh parsley, chopped
1/2 tablespoon rubbed sage
1 tablespoon thyme leaf
1/2 tablespoon dried rosemary, crushed
1 1/2 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 teaspoon smoked paprika
2 tablespoons nutritional yeast
1/2 cup chopped walnuts (optional)
3/4 cup gluten free oats, ground

Method

Wash a medium sweet potato (about 7 ounces), pierce it several times with a fork, wrap it in a paper towel, and microwave until done, 4-5 minutes.
Allow to cool enough to handle and then peel and set aside.
Mince the onion, celery, and carrot. Food processor is the fastest way.
Scrape the tofu mixture into a large mixing bowl and add the oats and the cooked vegetables. Stir well.

Preheat oven to 375F.
Line the baking sheet with parchment paper or spray with non-stick spray.

Remove from oven and allow to stand for 10 minutes before slicing and serving.

Tempeh Bacon

Part of a delicious weekend breakfast! Shown here with steamed baby spinach.

Tempeh Bacon
Serves 4 (or two greedy people like me)

Ingredients
1 packet Tempeh
1 Tbls oil for frying

Marinade;
2 Tbls Braggs liquid aminos or Tamari soy sauce
1/2 tsp Liquid smoke.
1 Tbls water or coconut amino
1 Tbls BBQ sauce (I used Annie's Organic)
1 Tbls agave or maple syrup

Method

Steam the tempeh for 10-20 minutes.
You can skip this step if you don't mind the regular taste of tempeh but it helps to kill the bitterness.
Slice tempeh thinly and put aside.
Whisk all marinade ingredients together and place in a seal-able container or a ziplock bag.
Add tempeh to the marinade and refrigerate for at least 1 hour (best over night), turning occasionally.
Drain tempeh from marinade and pat dry with a paper towel.
Heat oil in frying pan on a medium heat.
Add tempeh and brown on each side, around 3 minutes on each side.
Once brown serve with other breakfast items.

Turkey Style Deli Slices

I changed this recipe to make it gluten free, the original recipe is from Maple Spice.
They were pretty good but still had that bready flavour that most seitan does.

Turkey Style Deli Slices

Ingredients

100g (1/2 cup) canned white canellini beans, drained and rinsed.
1 Tbsp olive oil
1 cup water
2 Tbsp soy sauce (I used Tamari)
1/2 tsp vegan Worcester sauce
3 Tbsp nutritional yeast
1 tsp onion powder
1/4 tsp smoked sea salt
1/2 tsp dried sage
1/2 tsp dried thyme
1 1/2 cups gluten free gluten substitute (I used Orgran brand)

Method

I prefer to do all of this in a mortar and pestle but you could use a food processor if you prefer or even by hand.

In a mortar and pestle add the nutritional yeast flakes, onion powder, salt, sage and thyme and grind until the yeast flakes are like a powder and the herbs get crushed. Remove and set aside.

Add the beans to the mortar and pestle and mash until really creamy. Transfer to a large bowl.

Mix together the water, olive oil, soy and vegan Worcester sauce in a pyrex measuring jug then whisk in the yeast and seasonings. Pour a little over the beans and whisk to incorporate, slowly add the rest of the liquid whisking all the while until mixed.

Add the wheat gluten and mix well until it comes together. Sprinkle some more wheat gluten onto a surface and knead a few times until you have a large, wide oval loaf. I probably kneaded in a couple tablespoons more gluten here but the loaf will be on the wet side. That's good as you won't end up with dry deli slices, although it is probably the reason for the holes in the end product there. Still, I wouldn't change a thing here as the taste and texture was lovely!

Wrap the loaf up in foil, sealing the edges well and steam for 1 hour. Do check the water levels now and again as it can easily boil dry!

Preheat the oven to 180C when there is about 15 minutes left of steaming. Place the foil wrapped loaf directly in the oven and bake for 30 minutes. Remove and let cool then it's ready to be sliced thin for sandwiches.
